Four hours by the fire, myrtle branches and patience: porcheddu is not cooked, it is celebrated. In Ogliastra — land of shepherds and centenarians — it remains the dish of occasions that matter.
The fire ritual
The skin must sing — crisp, golden, thin — while the meat stays soft as butter. That means tending the fire for hours, turning the spit with liturgical slowness. It is a convivial craft: around the embers you talk, taste Cannonau, wait together.
Where to find it
In inland farm restaurants and the Golgo refuges, usually on reservation: real porcheddu takes time and must be ordered ahead. Beware "on the spot" versions — haste is its only enemy.
The pairing
Pistoccu bread for the juices, Jerzu Cannonau to stand up to the richness, and seadas with strawberry-tree honey to finish. Afterwards, a walk under the Golgo stars is practically mandatory.
